You would expect to see some pink in a medium-rare steak, so don’t be surprised to find it in your pork chops! If the pink color freaks you out, you can continue cooking it until it reaches 155☏. Brown sugar and clove are a great way to add in some sweetness. Some others that go well with pork are sage, rosemary, cayenne, thyme, and coriander. Some of my favorite herbs, spices, and seasonings to use as a pork chop seasoning are cumin, garlic, paprika, and chili powder.
